LaraBars. The Homemade Version.

I love LaraBars. Unfortunately, they are too high in calories and too low in protein for me at the moment, what with dieting and all… but they are most definitely delicious and healthy, an unbeatable combination. There is a member of the family who can afford the calories, though, and the triathlete who resides under our roof always needs a quick, portable and healthy snack to boost his energy while he runs, bikes and swims. So when I came across this ridiculously easy recipe, I just had to try it.

The following is the recipe for the original version. I will be posting different versions as I make them.

The raw ingredients. Dates, dried cranberries, almonds and cinnamon.

Process the dates and dried cranberries in a food processor until they form a paste (mine stuck together in a ball when it was ready). Transfer the paste to a bowl, add the almonds to the food processor, and process until finely chopped. Add the nuts to the paste, add the cinnamon and squish the mixture together until it is completely combined. At first, I didn’t think I would get all the nuts incorporated into the paste, but eventually, it all came together.

Cranberry/date paste, chopped nuts, and cinnamon.

Divide the mixture into the appropriate number of pieces, and form into bars (or whatever shape you prefer). Wrap each bar with plastic wrap and store in the fridge.

Fruit, nuts… how could it not be good!

    thanks for the recipe, will put some together this week. They would have been nice while we were snowshoeing in Gatineau Park yesterday or skating on the Rideau today or for the high butt calorie burning car ride home tomorrow!

      Yeah, I find I tend to burn a lot of calories sitting on my butt in the car, too. All that cardio, weight training… any amount of activity, really… SO overrated :)
      So I guess I need to do a lot of driving to earn one of these delicious little bars…
