LaraBars

Ingredients:

1/2 cup roughly chopped dates

1/2 cup dried cranberries (or dried cherries)

2/3 cup whole almonds (toasted is best)

1/4 tsp cinnamon

Method:

Pulse the dates and cranberries in a food processor until they form a paste. Remove the mixture to a bowl. Without cleaning the food processor, process the almonds until they are finely chopped. Add to the paste.

Add the cinnamon.

With your hands, squish the mixture together until well mixed. Form into 4 bars (or whatever shape you prefer) and wrap with plastic wrap. Store in the refrigerator.

Yield: 4 bars.
